Okay, so I have done Pumpkin Pie Baked Oatmeal & Apple Pie Baked Oatmeal - both of which have been huge successes! I know I love them because I haven't not had a pan in my fridge since I made the first batch weeks ago! This is great as a filling breakfast or an evening snack. Well the other day I had a few banana's that had gotten over ripe and in my experience the only thing over ripe banana's are good for is banana bread and banana pancakes. That is when it dawned on me...Banana Bread Baked Oatmeal! I am proud to say this oatmeal tastes a lot like banana bread with no where near the calories! I actually like this best cold as a bar but it is just as good broken into pieces and heated up with some maple syrup to have as a more traditional oatmeal.
Banana Bread Baked Oatmeal: 12-18 Servings
4 Eggs
3C Milk - I use FF or 1%
4-5 Over ripe Bananas - Mashed/Blended (should come up to 2.25C once mashed approx.)
1/2C Brown Sugar
6C Uncooked Old Fashioned Oats
1.5tsp Baking Powder
1tsp Salt
1tsp Vanilla Extract
1tsp Cinnamon
Mix the eggs and milk together then add all remaining ingredients. I let it sit for 5 minutes so the oats can absorb some of the liquid then I pour into a greased 13×9 pan and cover with foil, bake at 350° for 30 minutes then uncover and bake an additional 30-40 minutes until the top of the oatmeal is evenly cooked. Remove from the oven and let it cool on the counter, then slice into 12-18 slices, and refrigerate until you are ready to eat.

Have you tried freezing this? It's very good, I'd like to freeze and take with me for vacation.
ReplyDeleteI'm so glad you like it! I myself have not frozen it but I know that others have and said that it freezes and thaws very well. I actually added 2C of frozen blueberries to my last batch and it was even better! - Jillian

ReplyDeleteI'm sorry but I do not provide the Nutritional Information for my recipes. Right now I have the Weight Watchers Point values at the bottom of each recipe but I always tell people they should run the numbers themselves as I could make an error or calculate points differently than they do. I believe there are websites that you can put ingredients into and it will tell you what the total NI is.

This is wonderful. I love oatmeal and banana bread. I live alone most of the time so I did wrap them and freeze them for breakfast. Cheaper than a Luna bar and tastes better and probably better for me.

ReplyDeleteThis looks really good. I like chocolate chips in my baked oatmeal. Do you know what the PP value would be if I added 1 C semi-sweet chocolate chips? Not sure if that would be the right amount to add - just guessing. Thanks!
ReplyDeleteLaura, I believe most bags of chocolate chips are 12oz, so if you used half a bag it would add 2 PP to each serving.

ReplyDeleteHey Jilli! I made this today. Delicious!! Why did I wait so long? I follow WWs Simply Filling and by using FF milk, this recipe comes to 8 PP total because everything else is a power food. Mmmmm breakfast treats!
ReplyDeleteHi Liv! so glad you enjoy it! If you want to make it 0PP for Simply Filling then just eliminate the brown sugar! I have been doing this and think it works out well just from the sweetness of the bananas!
