Baked Apple Pie Oatmeal

A few weeks ago I saw a recipe for Baked Pumpkin Pie Oatmeal and to my delight it was delicious and filling and served me well for breakfast for a week and a half! Now while it was great plain pumpkin puree isn't something I can always get my hands on, so I decided to see how it would work if I subbed unsweetened apple sauce for the pumpkin and to my delight it was even BETTER!!! I love when things like that happen. One thing that really makes me happy about this recipe though? It only takes a few minutes to throw together, an hour in the oven and then breakfast is ready for 12-18 days! (see my recipe for the Baked Pumpkin Pie Oatmeal)

Baked Apple Pie Oatmeal: 12-18 Servings

4 Eggs
3C Milk - I use FF or 1%
2-1/2C Unsweetened Apple Sauce
1/2C Brown Sugar
6C Uncooked Old Fashioned Oats
2 Apples (I use Pink Lady) - Peeled & Chopped
1.5tsp Baking Powder
1tsp Salt
1tsp Vanilla Extract
1tsp Cinnamon
1/2tsp Nutmeg

Mix the eggs and milk together then add all remaining ingredients. I let it sit for 5 minutes so the oats can absorb some of the liquid then I fold in the apples and pour into a greased 13x9 pan and cover with foil, bake at 350° for 30 minutes then uncover and bake an additional 30-40 minutes until the top of the oatmeal is evenly cooked. Remove from the oven and let it cool on the counter, then slice into 12-18 slices, and refrigerate until you are ready to eat. I like to break a slice into small pieces and microwave for 1-2 minutes then I drizzle a tablespoon of maple syrup on top. It is quite wonderful!

  1. made this late last night after Jazzercise practice - so i was tired :)

    used 4 packs of instant oatmeal maple and brown sugar and two packets of cinnamon instant packets. then 4 cups of regular oats. skipped adding the sugars because of the ingredients in the instant packs. replaced the milk with almond milk and used our home made apple sauce 1 1/2 cups and 1/2 a cup of our home made apple butter. mixed in baking powder, salt, cinnamon, and nutmet. but i was tired and forgot the real apples :(

    tossed in the oven and baked. just had it for breakfast and it was wonderful.

  2. This is delicious! I love how filling oatmeal is, but realllly loved the texture of this baked oatmeal.

    I split the recipe into two pans, with different fruits. One with peaches (2 cans of peach slices canned in water, rinsed and patted dry, chopped), and one with bananas (3 thinly sliced).

    I kept the applesauce in the recipe, even though I wasn't doing apple flavor, and it was a great addition. I also used Splenda brown sugar, and added 1/2 c ground flaxseed meal. It came out great--filling, not too sweet, full of flavor, great texture.

    I also baked these on parchment paper for easy release, which I recommend. Thanks Jillian! I will be trying different fruits next time :)

  3. I am so glad you enjoy them! I made one last week with the apple pie base, eliminated the cinnamon/nutmeg, doubled the vanilla and added a bag of frozen blackberries. It has been great. I need to start making them into muffins!

  4. What a great idea! I have two bags of frozen mixed berries I wasn't sure what to do with (I don't have a great blender for smoothies), so that's what I'll do next. Maybe I'll try them in my jumbo muffin tins as well. Yummy, can't wait.

  5. this recipe is AMAZING!! we substituted in egg beaters, Granny smiths for tartness and apple pie spice for the cinnamon... It was perfectly sweet, satisfying and very filling. It made 16 generous pieces and look forward to having it again :D

  6. I made these as is. My husband and I both loved them, and my baby did as well. The 4 yr old not so much, but then he's 4 and you know how 4 yr olds are!

    I heated mine up in the microwave and added 1/2 cup milk for a yummy breakfast oatmeal, and they turned out great.

  7. The pumpkin I tried was amazing so I thought I would try this one too. My mother is recovering from surgery and I can't be with her during the week. She has several different folks coming to stay with her throughout the week this week so I made up a batch for her house too. Both are in the oven now and the house smells heavenly. Oatmeal...it may be what's for lunch!

  8. I know I'm late to the party on this one but I'm in love with all your baked oatmeal recipes! I'm commenting on this one because it's what's in my bowl this morning! It's so quick and easy...plus, it's one of the few healthier creations my boyfriend actually likes! The first time I made it I didn't have rolled oats so I used rolled barley...still delicious!
